Tasting note

Eruption rosé is a challenge as it combines explosive fruit aromas, richness of taste and special characteristics of the Xinomavro grape. Balanced, complex and attractive, it is an epitome for lovers of fresh and exuberant wines with their own unique aromatic profile.

Winemaking

The grapes are harvested manually and transported by refrigerated trucks to the winery. There the stems will remain in contact with the must for cold extraction at 5°C for twelve hours. The stems are then removed as the fruity aromas and the barely needed colour are extracted. Fermentation takes place with a gradual increase in temperature, so that the rosé wine acquires aromatic complexity. After fermentation, the wine will remain in contact with the fine lees to give it a velvety texture and a rounder mouthfeel.
